果実、鉄板焼き、ブラジル料理、さて次は。

1915年、「バナナを横浜に広めたい」という思いから水信は、当時珍しかった台湾バナナの加工問屋として創業。庶民にとって高嶺の花であったバナナの輸入と市場拡大に努めた。果実・青果の専門業者として成長しながら、昭和の半ばには、横浜で初めてフルーツパーラーを開店。新鮮なフルーツの美味しさや楽しみ方を伝えてきた。今では当たり前になったバナナパフェやストロベリーパフェなどの草分けでもあり、ハマッ子たちから 絶大な人気を得た。続いて取り組んだのは、横浜にはまだなかったステーキハウスを広めたいと鉄板焼き店をオープン。52年前、鉄板でステーキや海鮮などを焼くスタイルは、これもまた横浜のフードシーンに新風を吹き込み、大きな話題を呼んだものだ。もちろん現在も老舗の人気店として3店舗展開中である。そして7年前には本格的なシュラスコやフェイジョアーダなどを提供するブラジル料理店をオープン。ブラジル人も絶賛する味わいで、連日の賑わいを見せている。およそ一世紀にわたり横浜に常に新しい食文化を発信し続けてきた水信 は、次に何を仕掛けるのだろうか。

Having brought fruit, teppan-yaki, and Brazilian cuisine to Yokohama, what’s next?

Founded in 1915 to bring bananas, then an extraordinary rarity, to the man in the Yokohama street, Mizunobu started out as a processor and wholesaler of Taiwanese bananas. Growing as a fruit and vegetable specialist, it opened Yokohama’s first fruit parlor in the middle of the Showa period (1926-1989) to provide a place for people to enjoy the delicious taste of fresh fruit. It was one of the first outlets to offer the banana and strawberry parfaits that are now so common, and it became hugely popular with Yokohama locals. Mizunobu’s next venture was to open Yokohama’s first steakhouse in the form of a teppan-yaki restaurant. 52 years ago, the idea of grilling steak and seafood on a hot plate became the talk of the Yokohama food scene, and Mizunobu’s three old steakhouses naturally remain open and as popular as ever. Seven years ago, it then opened a Brazilian restaurant to serve authentic dishes such as churrasco and feijoada. Always packed, even Brazilians rave about its food. Having continued to bring new foods and styles of eating to Yokohama for a century now, what next has Mizunobu got up its culinary sleeve?
